Comfort Chili

Well, fall may be peeking it's head out here because I made some chili this week! Yes! This is a crock-pot adaptation of Annie's Eats Chicken Chili and I think you'll approve.

Crock Pot Comfort Chili
Ingredients:
4 boneless, skinless chicken breasts
2 chopped yellow onions (medium sized)
5 chopped bell peppers (I used 2 green, 1 red, 1 orange and 1 yellow)
2 cloves garlic, minced
2 tsp. chili powder
2 tsp. ground cumin
¼ tsp. red pepper flakes
½ tsp. cayenne pepper
½ tsp. dried oregano
1 chipotle chili in adobo sauce, finely diced (I forgot this!)
2 cans diced tomatoes in puree, not drained
3 cans beans, drained and rinsed (I used 1 can black 1 can great northern and 1 can white beans)
1 can corn, drained (or about 2 cups frozen corn)

optional for topping:
cheese
green onion
chips

mix together all ingredients except chicken in crock pot. place chicken in after, being sure it is well covered by sauce. set on high for 6 hours. when ready to eat, shred chicken and mix again. serve hot with any toppings desired.
