Yesterday my husband woke up with an unprecedented desire for pancakes. This may have been the 3rd time in our marriage he's specifically asked for them, so I quickly printed out Crystal B's recipe for Lemon Ricotta Pancakes (I think originally adapted from Bobby Flay) with some edits and handed it over. They were so delicious that I forgot to take a picture and instead gobbled down four. Yep, they are really really really good. I'm considering running up to a fruit stand and buying a lemon just so I can make more today. So without further ado, here is our version of the pancakes (which really are somewhere in between a pancake and crepe):
Lemon Ricotta Pancakes
3/4 cup whole wheat flour
3/4 cup all-purpose flour
4 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
2 tablespoons applesauce
1 1/2 cups buttermilk
1 tablespoon lemon zest
1/4 teaspoon vanilla
1 cup ricotta cheese
In a small bowl, combine all of the dry ingredients and whisk them together. Set aside.
In a large mixing bowl, combine the eggs, applesauce, buttermilk, zest, vanilla, and ricotta cheese. Using a whisk or a hand held mixer, combine these ingredients until they are well mixed. Add the dry ingredients 1/2 cup at a time until everything is combined.
Spray a skillet with non-stick spray and drop the batter using a 1/4 measuring cup. Cook until you see little bubbles form on the surface and then flip.
Serve with jam, fresh fruit, powdered sugar, lemon curd, or whatever else sounds wonderful!
